The house of Billecart Salmon was created in 1818 from the union of Nicolas François Billecart and Elisabeth Salmon. More than 200 years later, it is still family owned and now run by Mathieu Roland Billecart, 7th generation. Always striving for excellence, they own more than 400 small and 20 large oak casks to micro vinify their wines before the blend and use longer fermentation at a lower temperature to maintain freshness and finesse. Billecart Salmon rosé is the flagship of the house and Clos St Hilaire their premium cuvée.
