Sweet Wine

Sweet wines are made by encouraging the growth of Botrytis cinerea, a type of fungus that shrivels wine grapes also known as ‘noble rot’. Once on the grapes, it penetrates the skin, allowing the moisture within to evaporate thus concentrating the sugars. The most famous sweet wines are to be found in Sauternes, Bordeaux, but there are many other great examples in Mosel, Alsace, Hungary and new world countries worth discovering.  Read more…
