Fully hand-picked at optimum ripeness and manually sorted. 100% destemmed. Cold maceration (7°C for about 6 hours). Pneumatic pressing, cold settling, and fermentation under strict temperature control (14°C) in stainless steel tanks. At 110g per litre of residual sugar, the fermentation is stopped by rapid cooling of the tank and addition of alcohol. The wine is left to age on its lees in stainless steel vats. Lusciously sweet with aromas of orange blossom, honey, and ripe apricot. The palate is rich yet fresh, with candied citrus and a long, elegant finish.
