From a single vineyard of just 1.89 hectares, only a quarter was dedicated to Noble Rot. North–south rows, VSP trellising, and meticulous crop thinning ensured fully ripe fruit. Hand-picked in the early hours of the day. After a 24-hour soak and gentle pressing, juice yield was low—just 511 litres per tonne. Fermented cool with Zymaflore ST yeast in stainless steel. Light lees ageing before gentle fining, filtration, and bottling. Lusciously concentrated, this Noble Riesling offers intense aromas of candied citrus, apricot, and honeycomb. Silky texture and vibrant acidity lead to a long finish.
