Tollot-Beaut presents a bright and perfumed profile, featuring red cherries and slightly coarse tannins, embodying the essence of a classic rustic red wine.
Renowned for its consistently delightful wines from lesser-known appellations in the northern Côtes de Beaune, Tollot-Beaut is a family-owned and operated domaine. Currently, it is under the meticulous management of the charming Nathalie Tollot. The estate spans 24 hectares of vines across various prestigious sites, including Beaune, Savigny-lès-Beaune, Chorey-lès-Beaune, Aloxe-Corton, and Corton.
Their Pinot Noir is entirely destemmed and undergoes fermentation in stainless steel tanks for 10 to 12 days, with pigeage occurring twice daily. Over the years, the domaine has adopted a subtler approach to oak aging, aiming to enhance the delicate fruit character of the wines rather than overpower it. Typically, the wines are aged in barrels for 16 to 18 months, with up to 20% new oak for village and regional wines and 50% new oak for the Grand Crus.
Sandalwood, vanilla and toasty oak aromas frame the juicy cherry and blackberry flavors in this generous red. Bright and tangy, with lingering fruit and spice accents.
