    Product description

This wine is a true representative of the Chablis style. Domaine Jean Dauvissat’s vineyard spans almost the entire geographical area of the appellation, encompassing about forty parcels located in seven different communes. Each of these 40 parcels offers unique characteristics, harvested and matured separately before being artfully assembled to create a pure and rich Chablis. The vines, averaging 40 years in age, allow the Domaine to produce Chablis that perfectly balances minerality and fruitiness.

On the nose, it is crisp and mineral with hints of honeysuckle. The palate is coated in an abundance of fresh pears, complemented by a slight tart citrus backbone and a touch of light wet stone. This elegant and gentle profile is marked by hint of vanilla and a pinch salt, which elongates the finish beautifully.

  • About the producer

About the producer: Domaine Jean Dauvissat Père & Fils

Based in Milly, Domaine Jean Dauvissat Pere & Fils owns various vineyards across the Chablis appellation so they can produce wine with the perfect balance between minerality and fruit. They follow a strict vineyard management, using targeted pruning, a closely controlled de-budding and strict fertilisation according to the relevant vines. In the cellar they aim to produce a traditional Chablis style, where no wood is used. They also age their wine for a considerable time on their lees in modern stainless steel tanks before being bottled, so they have time to develop. The results are impressive. View our selection.

    Vineyards & Winemaking

The 22 hectares of vineyards spread over 53 parcels of vines and are planted on hillside sites on “argilo-calcaire” soil, sitting on the famous Kimmeridgian limestone that makes Chablis so unique. Vines are between 20 to 65 years of age. The wines are traditionally bottled 18 to 20 months after harvest.

    Wines Produced

Petit Chablis, Chablis, Chablis 1er Cru Les Vaillons, Montmains, Les Sechets and Fourchaume.
