Hand-harvested with meticulous selection in the vineyard, the grapes are transported in small containers to preserve freshness. The vineyard’s elevated location near Monthelons ensures freshness even in warm years.
Fermentation lasts 12-19 days in thermo-regulated concrete vats, with a 3 to 5-day cold maceration. During fermentation, the wine undergoes either pumping over or punch-downs. Aged for 18 months—12 months in oak barrels and 6 in vats. Fresh red fruit aromas, with vibrant cherry and raspberry notes. Its lively acidity and supple texture are complemented by a firm, structured finish.
