Manual harvesting and sorting in the vineyard. Grapes from a 3.2-hectare east/north-east facing vineyard planted on chalky clay-limestone soils between 320 and 370m altitude. The average age of the vines is 50 years old. Fermentation lasts over 12 days in thermo-regulated concrete vats, with a 3-to-5-day cold maceration. During fermentation, the wine undergoes either pumping over or punch-downs. Aged for 18 months—12 months in oak barrels and 6 in vats. Fresh red fruit aromas, with vibrant cherry and raspberry notes. Its lively acidity and supple texture are complemented by a firm, structured finish.
