Product description
Hand-harvested from late August to mid-September, with cover crops and biodynamic practices. Yields kept low at 22 hL/ha. Whole clusters gently pressed in a pneumatic press, fermented with native yeasts and minimal sulfites. Completed malolactic fermentation, then aged 9 months in concrete eggs, old oak demi-muids, and stainless steel vats. A complex blend of Ugni Blanc, Clairette and Rolle from handpicked 70-year-old vines. Vibrant aromas and flavours of white peaches, pears, green apple, and blood orange, with delicate floral and herbal undertones. Fresh with a textured mouthfeel.
