Two vineyards in West Sussex are key to the production. The first, near Petworth, features sandy soil that produces aromatic, low-yield fruit. The second, in West Marden, has loamy, flint-rich soil that delivers lively acidity. Grapes were foot-stomped and macerated for an hour to extract flavour. After gentle pressing, the wine fermented with Burgundian yeast in neutral oak barrels with full malolactic fermentation. Aged for 7 months in second-hand barrels from Chavy-Chouet. Bright aromas of crisp green apple and fresh lemon are complemented by a subtle touch of oak. The palate is vibrant and refreshing, with lively acidity that highlights flavours of tangy lemon curd and juicy green apple.
