Palomino grapes are hand-harvested from a mix of old vines (35 years) and young vines (6 years), cropped at around 9,500 kg/ha. This balance of vine age provides both freshness and complexity, rooted in Jerez’s signature albariza soils. Fermented in used Manzanilla barrels, the wine was aged for nine months on fine lees without stirring, building texture and subtle complexity while preserving freshness. A traditional vino de pasto—a still, unfortified Palomino from albariza soils. Bright and saline, it shows the variety’s hallmark minerality with hints of citrus zest.
