Old vines (10–50 years) grown on enclosed, wooded terraces at 300 m altitude in Ventoux; hand-harvested at low yields (33 hl/ha) into small 15 kg crates, with careful manual sorting. Cold maceration (48 h) before fermentation; 20 days fermentation with daily pump-overs in temperature-controlled stainless steel; matured 12 months in stainless steel and concrete tanks to preserve purity and freshness. Bright and expressive, with aromas of juicy red berries, violets, and subtle garrigue; the palate is fresh and vibrant, showing silky tannins, crunchy fruit, and a touch of spice, finishing with elegance and lift.
