Hand-harvested from 37-year-old vines, with an average target yield of 40 hL/ha—though final volumes vary with weather conditions. Aged for 18 months, primarily in stainless steel with small portions in 600L oak and ceramic. Full lees ageing, no bâtonnage, with complete malolactic fermentation. On the nose, it is crisp and mineral with hints of honeysuckle. The palate is coated in an abundance of fresh pears, with a slight tart citrus backbone and a touch of light wet stone. This elegant and gentle profile is marked by hint of vanilla.
