Grown on greensand soils at Nine Oaks Vineyard in Kent, the fruit is hand-harvested at reduced yields and farmed under regenerative practices. Produced using the traditional method from estate-grown grapes. After secondary fermentation in bottle, the wine spends over two years ageing on its lees, developing complexity and texture before disgorgement and release. Textured and refined, with aromas of brioche and biscuit layered over crisp green apple and citrus zest. A delicate mousse and refreshing mineral finish bring balance and complexity to this traditional-method English sparkling wine.
