Grown on clay‑rich soils in Tassarolo at 280–300 m altitude, the estate’s organic Cortese comes from average 30‑year‑old vines, yielding approximately 70 hl/ha, with mechanical harvesting ensuring gentle, efficient pick-and-processing. Vinification occurs in stainless steel tanks at a controlled temperature of 18°C to preserve the wine’s fruity aromas. Fermentation uses commercial yeast, followed by 6 months of lees treatment with regular bâtonnage. A traditional Gavi with aromas of white flower, peach, citrus fruit and pear. Fresh and soft with hints of minerals on the palate.
