Product description
Hand-harvested from dryland vineyards in Darling, with 20-year-old vines producing low yields of 49–63 hl/ha. Fermented in open-top fermenters using ambient yeast, followed by 18 months of ageing in French oak barrels (225L and 500L). Malolactic fermentation was completed in the barrels. Aromas of ripe red berries, spice, and subtle earthy notes. On the palate, it is smooth and well-balanced with bright fruit, soft tannins, and a lingering finish of pepper and dried herbs.
Lovely dark berry spice, shaved chocolate, violets, and sweet turned earth, with a sweet-sour intensity and mouth-watering depth.
