Paul Pillot alongside his children Thierry and Chrystelle, brought a new perspective and renewed energy to the estate which has led to a step change in quality. He uses a mixture of barrique and larger barrels to mature his wine and rarely uses more than 20% of new oak.
The 1er Cru Clos Saint Jean lies next door to their cellar and is surrounded by stone walls (Clos). Pure citrus aromas with great minerality and ample palate.
“This is at once slightly more elegant and a bit more aromatically complex as well with its airy and pure aromas of freshly sliced lemon, white orchard fruit and wet stone nuances. There is good volume to the moderately stony and intense medium-bodied flavors that are blessed with enough dry extract to buffer the firm acid spine that supporting the mildly austere, balanced and delicious finish.
