Product description
Grapes sourced from vineyards in Cabrières (N-W), La Bertaude (N-W), Palestor (N), and Bois Lauzon (N-E). Soils are composed of 50% galet stones, 40% clay-limestone, and 10% sand. Grapes are hand-harvested. After a 24-36 hour pre-fermentation cooling at 10°C, the grapes are destemmed. Fermentation spans 3-4 weeks with regular pump-overs and cap punching. The wine is aged in concrete vats for 9 months, left unfined, and lightly filtered before bottling. Ripe red fruit aromas with hints of blackberries, herbs, and subtle spice. The palate is smooth and balanced with silky tannins, fresh acidity, and a long, elegant finish. Can be drunk now or kept for a few years.
