Vineyards in south/southeast Pays d’Oc, a hot, dry Mediterranean terroir influenced by the nearby sea. Varying soil, shaped by winds from Pyrenees and Black Mountain, protecting vines and providing a cool summer morning breeze. Grapes macerate briefly on skins before pressing. Each variety ferments separately with commercial yeast in temperature-controlled stainless steel, followed by several months’ ageing on fine lees. Vibrant flavours with notes of ripe peach, apricot, and a hint of honeysuckle with refreshing acidity. It’s a harmonious and approachable blend that captures the essence of the sunny South of France.
