Hand-picked and whole-bunch pressed using a pneumatic press. Wild yeast fermentation and 6 months’ lees ageing in stainless steel. Coarse filtered prior to bottling. Zesty and vibrant, with aromas of lime blossom, green apple, and crushed herbs. The palate is precise and mineral-driven, with crisp acidity, subtle texture, and a long, citrus-laced finish.
