Growing their grapes on slopes overlooking Solutre, one of the finest of all the Pouilly Fuisse villages, Sylvie and Jean Pierre Seve use oak carefully, not to create oaky flavours but to allow an exchange between oxygen and the developing wine. The results are spectacular.
The family also have a small 1.2ha plot of Macon Solutre, which they treat the same way as their Pouilly Fuisse, but without further ageing in barrel. The resulting wine is bursting with fresh apple aromas and hints of tropical fruits. Slightly buttery on the palate with a good acidity.
