Palomino grapes are hand-harvested from a mix of old vines (35 years) and young vines (6 years), cropped at around 9,500 kg/ha. This balance of vine age provides both freshness and complexity, rooted in Jerez’s signature albariza soils. This Oloroso undergoes over 15 years of oxidative ageing, matured in a mix of traditional barrels: large 650 L chestnut casks and smaller 250 L oak barrels, which impart depth, complexity and concentration. Deep amber with aromas of walnut, fig and warm spice. The palate is dry and powerful, showing layers of dried fruit, roasted nuts and savoury complexity, finishing long and elegant.
