Palomino grapes are hand-harvested from a mix of old vines (35 years) and young vines (6 years), cropped at around 9,500 kg/ha. This balance of vine age provides both freshness and complexity, rooted in Jerez’s signature albariza soils. Crafted from Palomino grapes, the wine undergoes eight years of biological ageing under flor: four years in dynamic solera ageing followed by four years in static ageing, developing depth, complexity and saline finesse. Bright straw yellow with aromas of dried chamomile, sea spray and toasted almond. The palate is bone dry and saline, layered with nutty flor character, fine acidity and a long, savoury finish.
