Palomino grapes are hand-harvested from a mix of old vines (35 years) and young vines (6 years), cropped at around 9,500 kg/ha. This balance of vine age provides both freshness and complexity, rooted in Jerez’s signature albariza soils. The base wine is produced from Palomino grapes and enters the traditional solera system for biological ageing under flor, averaging five years, which imparts the wine’s signature freshness, salinity and finesse. Pale straw with aromas of chamomile, green almond and sea breeze. Lively and bone dry on the palate, showing saline freshness, delicate floral character and a clean, persistent finish.
