Grapes and juice are selected from multiple regions to achieve the desired character, balance and purity of fruit. Alcohol is gently removed at low temperature, then the wine is blended with fresh grape juice and re-fermented using specialised double-fermentation and yeast techniques to restore aroma, structure and mouthfeel, with strict quality control throughout. Aromas of candied lemon, stone fruit and light pastry with subtle white florals. Bright citrus, pineapple and mango on the palate, supported by fine minerality and a touch of creamy vanilla. Fresh acidity carries a clean, medium-length finish.
