Vines are planted on chalky, south-facing slopes in Chilham, Kent, mirroring Champagne’s terroir. Sustainable practices are employed to maintain soil vitality and environmental balance. Fermented and matured in stainless steel with full malolactic conversion for texture. Aged on lees for three years before disgorgement, with a low dosage to preserve freshness and purity. Bright and precise, with aromas of green apple, lemon peel and chalk. The palate is vibrant and finely textured, showing crisp acidity, delicate mousse and a clean, mineral finish.
