Paul Pillot alongside his children Thierry and Chrystelle, brought a new perspective and renewed energy to the estate which has led to a step change in quality. He uses a mixture of barrique and larger barrels to mature his wine and rarely uses more than 20% of new oak.
Located behind the two ‘Montrachet’ villages, Saint-Aubin is a great source of fine wine. Citrus and biscuits on the nose with a hint of honey. The palate has crisp citrus aromas, followed by a slightly buttery texture. A great value white Burgundy from one of the regions top producers. – DWM, March 2017
