Sourced from different vineyards, the parcels were fermented separately to add complexity to the wine. Shoreline has also been aged for four months on its lees to add structure and body.

After years of success with their cider production, Lyme Bay decided to make wine. They outsource their grapes so they can be consistent with the quality of the wine they produce year to year. Picking from various terroir also give them the possibility to produce some of the most complex wines made in England.
