Product description
Grown in the cool-climate Adelaide Hills from the single-vineyard Mappinga site in Oakbank — identified by Sidewood as its coolest vineyard. Wild (ambient) yeast fermentation. 20–30% whole bunch, balance whole berry. Limited bâtonnage. Aged 18 months in French oak, 30% new, in 300- and 500-litre barrels (fine-grained, medium toast). Barrel selection prior to bottling. Perfumed red-forest berries, dark plum and spice lead into a plush yet dry palate with fine oak and a decadent chocolate-licorice finish.

Hand-picked, fermented with 25-50% whole bunches, or crushed and destemmed, matured in French oak (35% new). In Adelaide Hills terms is full-bodied thanks to its rich display of blackberry, dark cherries and plum, which dome with licorice, black pepper and spices. The tannins are firm, but in balance.
