Made from 16-year-old Dijon clone vines, grown without systemic sprays or insecticides to support biodiversity and vineyard health. Fermented in stainless steel with 15% reserve wine dating back to 2010, aged in third-use French oak. Aged on lees for seven years, with partial malolactic fermentation and no chaptalisation to preserve freshness and finesse.
