Vineyards in Elgin, South Africa, at 350 meters above sea level. Grapes from 10 different vineyards from 5 different growers. Pinot Noir Clones used are PN113, 115, 777, 667 & 459 with vines aged more than 15 years. 10-day cold soak before spontaneous fermentation in small custom-made stainless steel fermenters at 28-32°C. Aged for 10 months in 500L, 300L, and 228L Burgundian oak barrels, with 5% new, all 2nd, 3rd, and 4th fill, from the Pierre du Bourgogne forest. Aromas of strawberry and cherry, alongside citrus notes. Medium-bodied with a beautiful soft texture and a long pure finish.
