Product description
Hand harvested from vines aged 15+ years, with a low yield. The grapes are sourced from the Elgin region, known for its cool climate that allows for slow ripening, preserving freshness and acidity. After crushing, the grapes undergo 4 hours of skin contact before free-run juice is separated from the press juice. Fermentation occurs in a combination of 70% stainless steel and 30% egg-shaped vessels. The wine is aged on lees for 3 months. Vibrant aromas of citrus, green apple, and subtle herbal notes. The palate is crisp and fresh, with a zesty acidity and a well-rounded mouthfeel, finishing with hints of minerality and a touch of savoury complexity.
