Grapes from Idahue Farm, in Licantén. This vineyard, planted in 2012, is located 25km from the Pacific Ocean. The bunches were destemmed, avoiding crushing to prevent astringency. Fermentation occurred in micro-tanks at 26–28°C for seven days, followed by maceration. Half the blend aged 10 months in 225L medium-toast French oak, with 100% malolactic fermentation. Mayta Cabernet Sauvignon displays rich flavours of cherry and blackberry with layers of chocolate and green pepper. Its velvety tannins and hints of vanilla and spice add complexity, leading to a long savoury finish.
