The estate’s vineyards, situated in the foothills of Mt. Defiance at an elevation of 1,200 feet, are planted with a combination of Dijon, Wente, and Davis Chardonnay clones. Sustainable agricultural practices and meticulous yield management. Gently whole-cluster pressed, the juice was fermented in 33% new French oak puncheons. Bâtonnage (lees stirring) and partial malolactic fermentation (around 50%) were employed to develop complexity and mouthfeel. Aged for nearly a year before bottling. Fresh notes of ripe citrus, green apple, and subtle stone fruit, with a hint of vanilla and toasted oak. The partial malolactic fermentation adds a creamy mouthfeel, while vibrant acidity provides a refreshing finish.
Poached-pear and peach aromas here, as well as a more savory, nutty edge. The palate has rich nougat-like flavors, together with poached peaches and baked apples. Drink now.
