Product description
Vineyards are situated at 280 metres above sea level. The Pinot Noir is sourced from clones consisting of 50% PN 115, 40% PN 113, and 10% PN 777. 80% whole bunch fermented. 20 days of cold soaking followed by spontaneous fermentation in small open fermenters at temperatures around 28-32°C. Aged for 12 months in 228L ‘untoasted’ barrels. 30% new, the rest 2nd and 3rd fill. Oak from the Pierre du Bourgogne forest. Aromas of strawberry alongside notes of forest floor and mushrooms. Linear, tight with a mineral core coated with some beautiful texture and red fruits. Long pure finish.
