17th Century legend has it that it was a monk named Dom Perignon who discovered sparkling wine, when he was experimenting in Champagne. While he dedicated his life to eliminating the bubbles, his studies helped future generations understand the process. Today all sparkling wines go through two fermentation processes. The first one converts the sugar into alcohol and the second retains the gas and creates the effervescence.
